Best Banana Pudding Ever!

This is no ordinary Banana Pudding!  It’s the best ever, and it’s the kind of dessert that makes people amazed at the first bite and run to get the recipe on the second.  The secret ingredient is the can of sweetened condensed milk, which adds plenty of creaminess and rich sweetness.

To make this gluten-free, you just need to use GF animal cookies instead of Nilla Wafers.  I usually make two versions with both kinds of cookies, so everybody’s happy.  But, I’ve been told that the gluten-free kind is just as good.  It’s really not about the Nillas anyway when you taste this pudding.

Gluten-Free Banana Pudding:

1 can sweetened condensed milk

1 large tub of Cool Whip, thawed

1 large package of instant vanilla pudding

2 C. milk

Mix all ingredients together until smooth and fluffy.  Layer cookies, then bananas, then pudding in a large bowl.  You’ll do this 2 or 3 times.  End with a layer of cookies.  It’s extra good if you make it a day ahead.  Refrigerate until ready to serve.

I use KinniKritters Animal Cookies for our gluten-free pudding and Nilla Wafers for the regular pudding.

    That’s crazy that you posted this b/c I just made the same pudding with the same gf cookies for my birthday! I must have gotten the recipe from you. It is so so good!

    Its amazing that you let anything wheat related in your house – I reluctantly let my husband have his oreos in the house, but he has his own cup and his own plate for those, and the package is wrapped in plastic in the pantry, lol.
    Its just too easy for someone to forget to wash something with gluten on it, or have it on their hands or whatever, and then those with celiac come into contact with it. Or drink out of someone’s cup after eating gluten (backwash). So we are a gluten free family. If my husband eats a hamburger on the way home, he has to wipe down the steering wheel, and wipe down the seat – and he throws away the packaging – definitely not me. 🙂 I’m trying to convince him to only eat that stuff at the actual restaurant, and not have it anywhere near our property. 🙂

    We just found out our son has a gluten allergy so I am new to your site and love what I’ve seen so far. Very informative and you make it sound like it’s not that big a deal to go GF. (look, I think I’m even getting the lingo!!) Like Facebook, I have a difficult time navigating my way around at times, so I might not even be in the right area to ask questions???
    But here is my question: can you tell me how to find good bag lunch ideas and recipes for school? I’ve been stuck in the usual lunch rutt and come to find out the wrong rutt at that!

    • I’m so glad you find the site informative, and even happier that you get the vibe that it’s “no big deal”! It takes some thought and planning, but most of the time now, it is just normal life for us.

      For lunches, I think that you could pack “normal stuff” too. At first, try Udi’s or Rudy’s GF bread in the freezer section of most health food stores. I make my own bread now or use the flatbread recipe for sandwiches on the go. Here are some other ideas too:

      Lunch bag ideas:
      lunchmeat and cheese rolled up
      rice cakes with meat and cheese on top or try the chocolate ones with peanut butter and jelly spread
      hummus dip with veggies and GF crackers
      try making my flatbread for sandwiches
      homemade muffins
      mac and cheese kept warm
      quesadillas on corn tortilles wrapped in foil to stay warm
