These are so fun to make! They poof up in the oven, then fall to create a thick crepe-like pancake. You can top them with bananas, cinnamon, and brown sugar or baked apples.

On a lark, I made this today for breakfast – my husband’s birthday. Turned out great! We did it with a dusting of powdered sugar (only because my bananas were too green and I didn’t have any apples to do the baked apples). My youngest thought it was a bit “egg-y” but still enjoyed it. I think she’ll like it better with fruit. We can’t wait to do it again.
