I’ve been living the gluten-free journey since 2006. At first, I felt very overwhelmed having to learn a new way to eat, thinking about every ingredient I put into my mouth. Common things like making a weekly meal plan, a trip to the grocery store, ordering from a menu, or making dinner now came with huge learning curves and a host of emotions.
There are great resources out there that speak about eating gluten free which are full of medical information, testing options, ingredient lists, special recipes, and more.
But what I needed was practical help. I would have loved to sit down with someone who could tell me the essentials: what to eat for each meal, how to feed my family nutritiously, how to eat out safely, how to enjoy special occasions like everyone else, and how to do it all without spending a fortune in time and money.
Now that I’ve been walking this road for several years, I’m dedicated to helping you on your journey as well. I’m not a medical expert, just one who has lived gluten free long enough to finally feel at peace with it. I’m here to help you live easily gluten-free too, so whether you’ve just begun or have been gluten-free for a while, I hope you join me in the journey.

Thanks for the blog. I was diagnosed last Fall…was tickled it wasn’t cancer. I’m still getting used to checking the ingredient labels.
Sometimes I wake up realizing I ate something with Gluten the day before and have been known to rummage through the trash to re-read the lables and figure out what I should have avoided. I look forward to trying some receipes from your blog.

Well, now that you mention it, lol. I could use a very simple recipe for white gravy. I’m trying to figure out Chicken Fried Steak & gravy. Probably the one meal I have missed the most out of everything. I talked to Chris yesterday, she was telling me about one of your cakes? Chocolate perhaps? I can’t remember. Do you know which one she was referring to?
The chocolate cake is right here: It is wonderful! My lemonade cake and tres leches cakes are also really good!
For chicken fried steak, I use an all purpose GF flour mix for the breading and fry like normal. I haven’t figured out the gravy yet, but I never could do it with normal flour anyway.
When I try, I use the all purpose GF flour and cornstarch with milk to thicken it. You could also follow these directions, but use milk instead of broth for the CF steak.
Try my chicken strips too. They give me that chicken fried feeling.
I try gravy there too, but I need gravy lessons.
Sorry I haven’t been on in a while! Guess what? I made the chicken fried steak & gravy! It was amazing! Even the kids & husband complimented me on it. Thanks SOOOO much!! One of my favorite comfort foods is now able to be enjoyed again. Now I’m on to semil stressing about the holiday cooking, but with or without Celieacs, I do that! LOL. Thanks for all you rhelp & suggestions.

I pulled up your Thanksgiving stuffing recipe. Looks easy enough. I made crockpot Lasagne tonight, my first time to make gluten free lasagne. Not to bad.

Any idea on how to make a gingerbread latte like the one Starbucks serves this time of year? That was always my biggest indulgence during the winter.
I have contacted Starbucks to find out their GF options, and I’ll post it when they get back to me.

Here is the link to starbucks’ allergen information. They only list wheat as an allergen and not gluten. They also warn of cross contamination issues.
